Ranch to Butcher
All of our beef is raised in the Texas Hill Country. At approximately 24 - 28 months of age we deliver our beef to IO Ranch Processing, a USDA certified butchering plant located in Evant, Texas. The butcher will process, age, package, freeze and box the meat accordingly. The customer will be contacted when the order is ready for pick up from the ranch.
Purchase a Share
Hillside Beef is sold in “shares”. We sell whole, half, and quarter shares. Purchasing your "share" means you own that portion of the animal when it is delivered to the butcher. Shares are picked up directly at the ranch. Purchasing a half share is a great way for families and friends to go in together and allow you custom butchering instructions.
How much freezer space do I need? Great question! On average you will need to allow 3-4 cubic feet for a quarter share and 6-8 cubic feet for a half share.
